red fruit jelly
You need:
- ☼ 500g of red berries (strawberries, raspberries, red and black currents etc.)
In summer it is of course good to use fresh berries and cherries but in winter when they are not available we use frozen berries and cherries from a glass.
- ☼ 300g cherries
- ☼ 3 tablespoons of starch
- ☼ 250ml of fruit juice (if you used a glass of cherries you can use the liquid from the glass, but really any nectar or fruit juice that you like (that is kind of redish and not too sour will do, e.g. an apple grape juice)
- ☼ 75g of sugar
- ☼ 1 bag of vanilla sugar
- ☼ 1 bag of vanilla pudding, milk
preparation:
Wash the berries if you have fresh ones.
Then cut the berries into small pieces.
Put the starch and a bit of the juice (maybe 6 tablespoons) in the big pot and stir and mix until no lumps are left.
Add the rest of the juice, the sugar and vanilla sugar.
Let it come to a boil while stirring all the time. Then reduce the heat of the oven to 2-3.
Now add the berries and cherries to the pot.
Continue stirring until the mix isn't too liquid anymore but starts to look like jelly.
Then put the fruit jelly into a big bowl and let it cool.
Prepare a vanilla pudding or sauce to eat with the red fruit jelly.
